Abstract: Salmonella Food Poisoning
after a Community Banquet
This resource has been developed as a learning tool to enable you to develop
the skills to investigate a food epidemic and to take action to prevent
food-related epidemics.
Learning
objectives
To provide the student with practice in:
- Analysing reported information about an epidemic of
salmonellosis in a small community.
- Identifying objectives in investigation of epidemics
of food-borne illness.
- Designing a field environmental epidemiological investigation.
- Defining and calculating incubation period, attack
rate, food specific risks, relative risks and confidence intervals.
- Interpreting statistical analysis of data using relative
risk and confidence intervals.
- Identifying common problems in food preparation that
contribute to epidemics of salmonellosis.
- Planning strategies for prevention of food-related
epidemics and community education about environmental health issues.
