This resource has been developed as a learning tool to enable you to develop the skills to investigate a food epidemic and to take action to prevent food-related epidemics.

To provide the student with practice in:

  • Analysing reported information about an epidemic of salmonellosis in a small community.
  • Identifying objectives in investigation of epidemics of food-borne illness.
  • Designing a field environmental epidemiological investigation.
  • Defining and calculating incubation period, attack rate, food specific risks, relative risks and confidence intervals.
  • Interpreting statistical analysis of data using relative risk and confidence intervals.
  • Identifying common problems in food preparation that contribute to epidemics of salmonellosis.
  • Planning strategies for prevention of food-related epidemics and community education about environmental health issues.
