This resource has been developed as a learning tool to enable you to develop the skills to perform an epidemiological environmental health investigation and to take action to prevent chemical contamination of food.

To provide the student with practice in:

Analysing reported information about an unusual disease outbreak and initial planning of an environmental epidemiological investigation.

  • Identifying whether the outbreak is a toxicological or microbiological one.
  • Defining objectives in investigation of food-borne illness.
  • Designing a field environmental epidemiological investigation.
  • Calculating and interpreting statistical analysis of data such as odds ratio and 95% confidence interval in a case control study.
  • Defining and interpreting terms used in general and food toxicology.
  • Interpreting environmental testing and toxicological data.
  • Writing a strategy for prevention of chemical contamination of foods.
